Did you know Guinness has fewer calories than most beers? FACT: It only has 15 more calories than a Bud Light. So that totally gives us justification in making chocolate cupcakes with it, right?

If you started daydreaming somewhere around "Guinness" and we lost you somewhere around "calories," let me reel you back in. I made Guinness Chocolate Cupcakes with Baileys Cream Cheese Frosting last weekend and MY GOODNESS, MY GUINNESS they were good.

If you are planning a St. Paddy's party, these subtly themed deserts will have your guests dancing a jig. Set up video cameras because, we promise, it will happen.

Guinness Baileys Cupcakes

Ingredients for cupcakes

  • 2 cups flour
  • 2 cups sugar
  • ¾ cup cocoa
  • 1 ½ teaspoons baking soda
  • ½ teaspoon baking powder
  • 2 large eggs
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 1 ½ teaspoons pure vanilla extract
  • 1 cup Guinness Draught

Cupcake instructions

Preheat oven to 300 degrees and line a cupcake pan with cupcake wrappers. Mix the flour, sugar, cocoa, salt, baking powder and baking soda together in a large bowl. Beat eggs with an electric mixer until they are thick and bright yellow. Add oil, Guinness and vanilla to the eggs and mix well. Add the flour to the mix alternating with the buttermilk. (Start with the flour, then buttermilk, and go back and forth until you end with flour.) Pour the batter into the cupcake wrappers stopping about a ¼ inch from the top. Bake at 300 for 30 minutes and test with a toothpick. Add time accordingly depending on size of cupcake pan.

Frosting Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup cream cheese, softened
  • 1 ½ - 2 cups powdered sugar (depending on sweetness desired - start at 1 ½ and add to taste)
  • 1/3 cup Baileys Irish Cream
  • 1 teaspoon pure vanilla extract

Frosting Instructions

In a medium bowl, beat softened butter and cream cheese together. Slowly stir in vanilla and Baileys Irish Cream. Add ¼ cup of powdered sugar at a time and whip on high until frosting is the consistency and sweetness that you desire.
