As the back to school season looms, perhaps your kids are singing this right about now. Maybe your kids have never seen Billy Madison and you’re the one signing it, thrilled that you get to give your kids back to their teachers. Maybe you’re so overwhelmed with getting the kids ready for the new school year that you’re planning a great escape. We’re here to tell you, it’s okay. You’re not alone. Just look at all the parents riding the back to school rollercoaster too.
We’re not saying cocktails are the answer to everything, but during a time of highs, lows, tantrums and parental ego blows, these back to school spritzers are so delicious that they might help a little. Whether you’re elated to send the kids back to school or dreading it, we promise that once you’ve completed mommy/daddy duties, these spritzers will taste like the beginning of summer.
Mix all ingredients in an ice-filled glass and stir with a spoon. Garnish with an orange wheel and turn on that show you’ve dying to watch now that the kids aren’t around.
Combine Chambord and wine in a strainer filled with ice. Shake well and pour into an ice-filled glass. Top with La Croix and garnish with raspberries and sprig of rosemary. Sip when you get home to an empty, silent house. Maybe it’s even clean. A girl can dream!
- 4 ½ ounces Hi! Prosecco
- 2 ½ ounces Costa Del Sole Limoncello
- 2 lemon wheels (line glass with this before assembling cocktail)
- 1 ounce club soda
Line your glass with the thinly sliced lemons. Fill gently with ice. Mix everything together and give it a gentle stir. Savor it then pat yourself on the back because you deserve it.
